Behind the pans with 24 year old Prasanta who works as a groundsman at Dasghara Women's College (with dad, mother and brother). He stopped one day to cook us lunch in the absence of Sandryha and turned out he doesn't just do wonders watering the spinach. Crescendoing into a 3hr symphony of Bengali cooking and hit peak 🎬 with coconut slaying and jal muri cone interval. Everyone has their own rhythm here and its beautiful to watch, drawing in passers-by who helped slice stuff on the boti.
ROOTS: Born in Dasghara village.
ROUTES: Works with brother, mum and dad on the ground of Dasghara Women's College set up in 2016 for first generation educated 18-21 year old girls of the Hooghly region. Learnt to cook from his family but specially his dad: "My dad is a beautiful cook... not so much mama but learnt from both and am grateful" that now his dad's not so well he can carry on the baton.
FRUITS: Future head cook at Dasghara College? Favourite dish is alu saag, and uses mustard oil to get his locks so bouncing upright. On the lunch menu below: alu saag, fish dead dal, fish chip curry (fried in mustard oil first), ugly fruit made into sweet chutney, fried aubergines and return next day for episode of the killer omelette.
